Romanian Eggplant Salad


Busy, busy day today. I didn't even eat 'till 4 o'clock. I am a danger to myself when I have a lot of work to do. I don't feel any thirst or hunger, I don't even go to the bathroom! It's like I'm strapped to my desk and I can't move until I finish. 

Anyway, I took a small break to eat something because my brain wasn't functioning normally anymore. And what is more relaxing than cooking?! I had some frozen  grilled eggplants in the fridge and I decided to make a quick eggplant salad. 

This is a traditional recipe that my mother taught me. Below is the whole recipe, including the grilling part. Trust me it is delicious, but be careful to follow all steps because it can easily turn into a mess!

Cauliflower and Tofu Casserole


I really enjoy making casseroles because I like eating foods that are creamy on the inside and crunchy on the outside. I made this dish a couple of days ago and it was a success! Even my “always-eating-meat-and-dairy” parents enjoyed it and trust me this means that it was good!



My granny used to make cauliflower casseroles but instead of tofu she used cheese. Heavenly combination! I really miss that recipe so I decided to “veganize” it. Hope you'll like it as much as I did!

Sour Berries Jam


I really love jams, but since I stopped eating sugar, I don’t make them that often and in large quantities. As you know I usually make jams out of dried fruits because this way I don’t have to add any sugar, honey being enough to keep them conserved for some time.

A few days ago I visited my boyfriend’s parents and of course I returned home with lots of bags filled with fruits and veggies. I had about 2 kg of sour berries and I did not want them to spoil so I decided to make some jam. The recipe below is calculated for 1 kg of sour berries, resulting a 850g jar filled with sourly, cinnamon scented jam.

Herb Crusted Soy Schnitzels


Oh, what a busy day I had yesterday. It was for the first time in my life when I didn’t enjoy cooking and all I wanted was to finish and rest in bed. My “not-yet-vegan” boyfriend is going on a trip and I had to cook lots of meals for him. Furthermore, my camera didn’t work right and the lighting was awfully poor because it rained all day (this is why I need a light tent ... NOW!).   

I spent almost my whole day in the kitchen, super-stressed and terribly grumpy. And as a grand finale for the day, I made an amazing raw dessert but took really crappy pictures. Yep, great day yesterday. 
Anyway I will re-make the dessert because it was too delicious and I have to share it with you. 

Oh yes! About the recipe above...well it’s very tasty and it reminds me of my old days when I used to eat chicken schnitzels. In my opinion soy is the best replacement for meat, and combined with dry herbs, it’s absolutely perfect!

My Favorite Super-Easy Hummus Recipe


I love hummus! I have tried so many recipes of hummus, but I didn’t enjoy any of them as much as I enjoy this one. The great thing about this recipe is that it’s ready in only 10 minutes!
I didn’t use tahini paste and instead I used some toasted sesame seeds and a little bit of cold pressed sesame oil. I personally like sesame seeds very much, and I love their crunchy texture in my hummus. If you like your hummus to be very smooth, you can use tahini paste, the taste will be the same.
And now...my secret ingredient...GARLIC! Yes! I like garlic very much. Too bad the smell is so unpleasant, but still the taste is divine! I am a garlic and onion fan since I was just a kid; unfortunately now I only eat them when I’m not supposed to leave home...if you know what I mean. I only used 3 garlic cloves in this recipe so it’s not that “smelly”. I hope you’ll try it and let me know if you liked it!

Chickpea Veggie Burger Patties


This recipe is perfect for camping trips because it doesn’t spoil fast and it is also very filling. I don’t normally fry veggies but I had to finish this dish super-fast and I chose the easy but not-so-healthy path. Anyway, even though I fried the burgers, I used a small amount of oil and I also fried them for a very short time. The next time I will make veggie burgers I will try to grill them and see if it works just as well.

Multigrain Bread



I’m not a huge fan of baked goodies and I also don’t eat bread very often, but unfortunately my boyfriend needs bread at almost every meal the same way he needs air to breathe. I decided then to make a compromise, so once a week I make him a healthy and tasty bread which is surprisingly filling and instead of eating 5 servings of “filled with chemicals” bread a week, he only eats a healthy one. This is a simple recipe that does not require a lot of kneading.

I love marinated mushrooms. And I love apple vinegar with honey! This recipe is the perfect combination of flavors. The acidic flavor of vinegar combined with the sweetness of cashew sauce blend magically. This dish is perfect for hot summer days; it is very light and refreshing.

Boiled Potatoes with Onion and Rosemary


 I wanted something cooked but cooked fast and the word “potatoes” popped into my mind. I have about a sack full of baby potatoes from my boyfriend’s parents garden so I have to eat in this week a lot more potatoes that I usually eat, because I don’t want them to spoil.  This dish was very tasty! Potatoes are great in general, but the combination with onion dipped in paprika was just perfect. I hope you will enjoy it as much as I did.
